Perfect Dessert Ginger White Chocolate Blondies

I have to share this yummy yummy Martha recipe, for ginger and white chocolate blondies. I was baking late Friday night, only because it was slightly cool and the house wouldn't burn up with the oven on. I found the recipe in my Martha Stewart's Cookies cookbook... if you don't own this yet it is an absolute must. Just looking at all the amazing photos makes it worth the buy.

Please note that anything I changed is because it was 9pm and I just didn't have some ingredients (not because I don't trust Martha and her team!), they still turned out amazing!

Preheat the oven at 350 degrees. Use the cooking spray to grease a 12" x 17" pan {I used a 9" x 12", just meant 10 extra minutes of baking}

    • 2 3/4 cups plus 1 tablespoon all-purpose flour
    • 1 1/4 teaspoons baking soda
    • 1 1/4 teaspoons salt
    • 1 1/4 teaspoons ground cinnamon
    • 1 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 2 1/2 sticks (20 tablespoons) unsalted butter, room temperature
    • 1 1/4 cups packed light-brown sugar
    • 1/2 cup plus 2 tablespoons granulated sugar
    • 2 large eggs, plus 1 large egg yolk {I only had two eggs left in the house, so I nixed the extra yolk}
    • 1 1/4 teaspoons pure vanilla extract
    • 1/3 cup unsulfured molasses {I used honey as I never have molasses in the pantry}
    • 10 ounces white chocolate, coarsely chopped {I used one 12oz bag of Nestle White Chocolate Chips}

    1) Mix your flour, baking soda, salt, cinnamon, cloves, and ginger together in a large bowl, and set aside.

    2) With your stand mixer (or just normal mixer!) and bowl, combine butter, brown sugar, and white sugar. Mix on medium speed until it looks lights and fluffy

    3) Add your eggs one at a time and stir in between each one. Then add your vanilla and molasses (or honey) and mix it all up.

    4) Slowly add in your flour mixture until it is all combined. Scrape down the sides of the bowl as you need to.

    5) Stir in those white chocolate chips! Yummmm

    6) Pour your blondie batter into your greased pan and spread evenly.  Bake in the oven until golden brown, which will take about 25 minutes. {My pan was smaller, so bake time took 35 minutes}

    7) Perhaps the most important step: Lick the bowl clean.

    Let your blondies cool completely before you cut them into squares (I know, this is probably the hardest part...waiting!)

    Enjoy the yummiest yummy dessert ever. My whole house smells like chai tea and it's amazing. I love these. Thanks Martha!
